Black Honey is the most intense form of this method: the grain ferments into a thick, sticky pulp, which gives it depth and a velvety texture.

Caturra & Catuai
Caturra and Catuai are two popular arabica varieties grown in Central America. Caturra is a natural mutation of the Bourbon variety, prized for its balanced flavour profile. Catuai is a hybrid developed for robustness and yield - combined with honey processing, it produces coffees that are distinctly fruity but well balanced.
Black Honey
Black Honey is the most intensive form of honey processing, in which the beans are dried with a large amount of fruit pulp, without rinsing. It is a process that requires precision and experience, and the result is a coffee with a deep body, great sweetness and a complex profile.
