Brazil Serra da Canastra. This unique region in Brazil is renowned for its stable climate, even harvests and rich volcanic soils. As a result, coffee from Canastra tastes evenly throughout the year and is easy to brew. If you are looking for sweetness and a smooth body, this coffee was created just for you.

In Canastra, the days are warm and the nights are cool. This contrast slows down the ripening of the fruit and causes the grains to accumulate more natural sugars. As a result, the flavour profile becomes distinctly dessert-like. What's more, the dry and sunny conditions allow the fruit to dry quietly on the patio. This is important, as natural processing needs time and constant control.

Process natural gives the coffee its full sweetness. The fruit is dried whole, so the beans take over the sugars from the pulp. In the cup, it appears milk chocolate, caramel i nuts. The flavour flows smoothly and the acidity is low and pleasant. This makes the coffee work well in both espresso and pour-over.

Canastra, thanks to its unique location and specific microclimate, favours longer ripening of the coffee fruit. The result? A more intense sweetness and a perfect, velvety texture.

Botanical varieties

Yellow Catucaí is a Brazilian botanical variety developed from a combination of Yellow Catuai and Icatu, valued for its disease resistance and yellow fruit ripening on the bushes. Its genetics translate into crop stability and a distinctive coffee sensory profile. In the cup, it offers a high, honey-caramel sweetness with hints of yellow fruit, mild citrus acidity and a medium, creamy body with a velvety texture. This variety is ideal for those who appreciate the balance between classic Brazilian sweetness and delicate fruity freshness.

Processing method

Natural - the beans are dried together with the pulp of the fruit, giving the coffee a fuller flavour and higher sweetness.

What does Sweet Brazil taste like?

In a cup of Sweet Brazil you will meet milk chocolate, caramel and nuts. The taste is smooth, sweet and very pleasant. This is a coffee that works well in both espresso and pour-overs if you like classic notes without excessive acidity.

How to prepare?

Instructions for brewing in the espresso machine:

Dose: 18g

Yield: 38g-42g

Extraction time: 27-30 seconds

Instructions for brewing in the frenchnpress

  1. Weigh freshly ground coffee (e.g. 30 g) and pour into a French Press. Pour in hot, filtered water (~94-96 °C), e.g. 500 ml.
  2. Wait 4 minutes, without mixing.
  3. Gently mix the resulting crust, then collect the foam and floating particles.
  4. Wait additional 5-8 minutes, allowing the sediment to settle.
  5. Place the piston on the surface of the brew (do not press) and then slowly pour the coffee into the cup, taking care not to agitate the sediment.

Instructions for brewing in a coffee machine:

DOZA - Fill the strainer fully with coffee, without kneading.
EARNINGS - You will receive a portion of coffee according to the size of the coffee machine.
STEEPING TIME - To the very end!

✅ The rules for the perfect café coffee:

  • Always brew a full portion - as much as the café is designed for.
  • Pour into the lower reservoir boiling water - exactly to the level of the valve.
  • Remove the coffee machine from the heat, as soon as the coffee stops flowing into the upper container.
