If the esko brews for 10 seconds, is pale, watery, and "sour-ish", there is usually one culprit:1️⃣ Grinded too coarselyThe coffee should offer resistance. If you grind it like you would under a drip - the water flies through like a sieve.👉 Solution: grind finer. A micro step. Seriously, a millimetre makes a difference.2️⃣ Not enough coffee in the sieveToo low a dose = not enough "material" for the water to fight through.👉 Solution: check the dosage. Standard usually 18-19g, but depends on the strainer.3️⃣ Too little whipping (tamping)If you tamp lightly as if you're putting down a feather, the water will take advantage of this.👉 Solution: strong, even tamp. You don't have to be Hulk Hogan, but steady and repeatable.4️⃣ Coffee freshnessYes! Coffee that is too fresh (1-5 days after roasting) can tamp faster because it is still "working".👉 Solution: give the beans 7-14 days after roasting.
