Las Lajas is a coffee that pampers with raspberry sweetness and delicate florality, yet leaves a distinct mark thanks to its vinosity. Oscar and Francisca Chacón - pioneers of honey processing in Costa Rica - know how to extract the maximum from each cherry. Black Honey is the most intense form of this method: the grain ferments into a thick, sticky pulp, which gives it depth and a velvety texture.

Botanical varieties

Caturra & Catuai
Caturra and Catuai are two popular arabica varieties grown in Central America. Caturra is a natural mutation of the Bourbon variety, prized for its balanced flavour profile. Catuai is a hybrid developed for robustness and yield - combined with honey processing, it produces coffees that are distinctly fruity but well balanced.

Processing method

Black Honey
Black Honey is the most intensive form of honey processing, in which the beans are dried with a large amount of fruit pulp, without rinsing. It is a process that requires precision and experience, and the result is a coffee with a deep body, great sweetness and a complex profile. At Las Lajas, this method is perfected to perfection - yielding coffees that are clean but with intense sweetness and vinosity

How does it taste?

Like a raspberry liqueur served in a garden full of flowering shrubs. In the first sip, you smell intense raspberry, which immediately collides with a floral lightness - like the scent of jasmine wafting after a summer rain. Next comes a deep, vinous note - dry, elegant, balancing the whole. Clean, sensual and smooth - this is a coffee that tastes like a moment of reflection with good wine and great conversation.
